Are you talking about the fields that are available within the email templates? If so, I don't believe you can insert these into the subject line (at least it didn't work when I tried!):
It looks like you've already found and voted for this feature in our Ideas & Suggestions page. When a request is posted to that system, it goes through an evaluation process to decide whether or not it will be added to Insightly and, if it is going to be added, when it will be added. When we have updates, we'll let everyone who is following that thread know. :)
