Upon further investigation, it looks like the headers are not mapping correctly with the rest of the data.
I have exported our opportunity list twice today, and the data in the custom fields is not exporting correctly. I've never experienced this before-- it appears to be a bug.

I just exported our opportunities, and in the responsible user field, the email addresses are listed instead of the users' names.
I didn't download the fix from Microsoft, but I'm no longer having the speed issues. Just wanted to give you a heads up!
